10,000 macarons, nearly 2 meters high... The incredible figures of the cake celebrating the 20th anniversary of Prince Albert II's reign

This Saturday, July 19, to close the celebrations for Prince Albert II's 20th anniversary in Monaco, a giant cake was brought onto the stage before being enjoyed by the royal family. Here's a behind-the-scenes look at the preparation process.

Shortly before 9:15 p.m. on Saturday, July 19, the main door of the Prince's Palace opened again.
Six pastry chefs from the Fairmont Monte-Carlo Hotel, wearing chef's hats and ironed white aprons, appeared carrying a huge red and white cake, in the colors of the Principality. This brought to a close several hours of celebrations on the Place du Palais to mark the 20th anniversary of Prince Albert II's reign. 250 kg of indulgence

A particularly perilous operation, since the cake and its tray weighed approximately 250 kg and required coordination to overcome two small steps, but it was accomplished without a hitch.

The creation of this wedding cake required 60 hours of work and the expert hands of six pastry chefs, led by Fabrice Didier. "The cake is composed of approximately 10,500 raspberry and vanilla macarons," the Fairmont Monte-Carlo's pastry chef told us the day after the evening. "The large central cone measures 165 centimeters and the base is 160 centimeters in diameter. The total structure is approximately 1.90 meters high."

The Prince, as is customary, then cut into the cake before tasting a portion. A tasting validated by a wink to the people of Monaco and a thumbs-up. Princess Caroline then went to her niece, Princess Gabriella, to advise her to take one herself. She did so, as Princess Charlene watched on with a smile.
